Coconut Banana Bread

Ingredients:

1/2 cup of Unsalted Butter (1 stick)

2 1/2 cups of Flour

1/2 cup of Agave Syrup

1 tablespoon of Baking Powder

1 cup of Shredded Coconut

1 1/4 cup of Coconut Milk

2 Eggs

1/2 teaspoon of Vanilla Extract

2 Ripe Mashed Bananas

Directions:

Place rack in the middle of the oven and preheat at 350 degrees.  Grease a loaf pan.  In a large bowl combine the flour and baking powder, set aside.  In another bowl cream together the butter and agave syrup, then add the eggs, bananas and coconut milk and mix until combined.  Add the flour mixture to the wet mixture and combine, stir in the coconut.  Pour batter into the prepared pan and bake for about 50-60 minutes or until a tooth pick inserted comes out clean.  Enjoy!

Tips:

1) For a twist add 1/2 of pineapples and macadamia nuts to the batter.
